Dill Pickle Soup: A Surprising Twist on Comfort Food

So. Have you heard about the latest foodie craze? You probably have because I caught onto this months ago and it was old news then.

Dill pickle soup! Yeah, you heard me right—soup made with pickles. It might sound a bit out there, but trust me, once you taste it, you’ll be hooked. Tangy dill pickles swimming in a creamy, flavorful broth. It’s like comfort food with a twist!

The beauty of dill pickle soup is how it brings together these unexpected flavors in such a delicious way. The brininess of the pickles adds a kick, while the creamy base makes it oh-so-comforting. If you’re curious to try it yourself, I’ve got a killer recipe below that’ll knock your socks off. Get ready to join the pickle soup craze—you won’t regret it! Now, keep in mind that I don’t actually use measurements, I measure from the heart – follow at your own risk. ʕ·ᴥ·ʔ

1/2 stick of butter (salted, duh)
1-32(ish)oz jar of your favorite dill pickles (this is key, the heat is going to amplify the flavor, don’t cheap out)
1 cup of heavy cream (or half and half, or milk if you’re a savage)
1 cup or chicken broth (or, I honestly just prefer to mix up a cup of Knorr Chicken Bullion)
Diced Ham. I don’t know how much. A lot – like at least a pound
2 extremely healthy handfuls of shredded cheese (prefer half mozzarella and half cheddar)
1 extra heavy scoop of minced garlic
Fresh Dill to taste
Optional: bacon, potatoes, carrots, onion

For garnish: shredded parmesan, fresh dill, crispy dillies, chopped bacon

In a large pot, melt the butter and toss in the ham over medium heat. While that is doing it’s thing, dice up all the pickles in the jar and any other veggies you’re planning on adding. KEEP THE JUICE you silly fool. Actually, just go ahead and dump the juice in the pot right now. It’s fine. Add the diced veg to the pot. along with everything else and turn the heat to low. Stir constantly until the cheese has melted. If the soup is thin, I like to thicken in with just a little (like spoonful) tapioca starch. (This girl can’t eat corn so I don’t use cornstarch, but you could) OR just more cheese. Typically more cheese is the best answer. Sometimes I even use cream cheese. Feel free to make it your own!
